"LEMON CAKE".....Easy to make
1 bx.lemon cake mix
1 bx. lemon jello
3/4 cup canola oil
1 cup powdered sugar and 1 tbls. lemon juice.

2 c. flour
2 tsp. baking soda
2 c. sugar
1c. chopped walnuts
1 lg.can crushed pineapple, undrained.
Mix all ingredients together, stirring with wooden spoon. pour into a greased 9x13 in. pan and bake at 350 deg. for 35 min.
8 oz. cream cheese
1 stick margarine
1 1/2 c. dk. brown sugar
1 tsp. vanilla
Beat with electric mixer until smooth and creamy, spread on warm cake, poke with a fork to allow some of the frosting to seep into the cake.
Sprinkle more nuts on top if desired.
This is not only the best cake you'll ever bake, it's also the easiest

"ORANGE DATE NUT CAKE"
3/4 cup butter
1 1/2 cups sugar
3 cups flour
1/2 teaspoon soda
1 cup buttermilk
1 6 1/2 ounce package of dates
1 cup chopped nuts(pecans)
rind of one orange grated
Rind of one orange graded
1/2 cup orange juice
1 cup sugar
Cream butter and sugar add eggs
add 2 cups flour with soda sifted with butter milk
cut dates into small pieces and flour with other cup of flour
stir in next 3 things
grease and flour tube pan or angel food cake pan bake 350 for 1 hour
Make sauce while cake is baking
add grated peal to oj and sugar
when cake is done invert pan and place cake top side down on plate, pour half sauce over top as soon as it comes from oven then turn right side up pour rest on it. Best when served cold - slice only when cold.

Batter will be very thin and doesn't smell especially good either......but it is very good and moist!!
2c water+2tsp baking soda
Put all ingredients in a bowl and mix. Bake at 350° until done. Frost with your favorite frosting.

1 READY ANGELFOOD CAKE
1 LG. BOX STRAWBERRY JELLO
1 LG CONTAINER FROZEN STRAWBERRIES
1 LG. COOL WHIP
ABOUT 1 INCH OR A LITTLE MORE (USE YOUR OWN JUDGEMENT ) CUT DOWN 3/4 REMOVE CAKE AND SET ASIDE.
DO JELLO AS DIRECTED BUT USE ONLY 1 CUP COLD WATER.
MIX IN SAVED CAKE, & FROZEN STRAWBERRIES - MIX LET STAND UNTIL ALMOST JELLED
POUR INTO CUT OUT SPACE IN CAKE AND THE CENTER HOLE.
LET SIT UNTIL FIRM.
FROST ENTIRE CAKE WITH COOL WHIP.
MAY USE OTHER FRUIT AND OTHER FLAVORS OF JELLO
This is my family's favorite dessert when the fresh strawberries are available, It's as pretty as it is good, and it's nummy.
Start with a roll of Pillsbury sugar cookie dough,(or you can make your own roll, wrap in waxed paper and refrigerate a day or so)
Slice cookie roll 1/4 in.or less, place on a round pizza pan close enough together so that it bakes into 1 lg. cookie, let cool.
Mix 8 oz. cream cheese with 1/3 cup conf.sugar and 1 or 2 tsp.vanilla, add just barely enough milk or cool whip to make it spreadable,
spread on cookie,
slice 1 qt. strawberries lengthwise and spread over cr. cheese mixture,
then 1 pkg. strawberry glaze spread over berries, make sure they are all covered so they don't dry out.
chill and serve.
Very easy to make,beautiful to look at and oh so good.
Every where I've taken it it gets rave reviews and disappears quickly. I hope you try it, If you like strawberries, you will love it.
"LEMON ANGEL CAKE"
12 egg whites
1 teaspoon cream of tartar
1/4 teaspoon salt
1-1/4 cups sifted powdered sugar -- divided
1 tablespoon grated lemon peel
3 tablespoons fresh lemon juice
1/4 teaspoon vanilla extract
1 cup sifted cake flour
Beat first 3 ingredients at high speed with an electric mixer until foamy.
Add 3/4 cup powdered sugar, 1 tablespoon at a time; beat until stiff peaks form.
Fold in lemon peel, lemon juice and vanilla.
Combine remaining 1/2 cup powdered sugar and cake flour; gradually fold into egg white mixture.
Spoon batter into a 10-inch tube pan.
Bake at 375 degrees F. for 35 to 40 minutes or until golden.
Invert pan on a wire rack; cool completely.
"TUNNEL OF FUDGE CAKE"
1 3/4 cups softened butter or margarine
1 3/4 cups granulated sugar
2 cups powdered sugar
2 1/4 cups all purpose flour
3/4 cup unsweetened cocoa
2 cups chopped nuts (these are essential to the success of the recipe)
3/4 cup powdered sugar
1/4 cup unsweetened cocoa
1 1/2 to 2 T milk
Heat oven to 350 degrees F.
Grease and flour 12-cup fluted tube pan or 10-inch tube pan.
In large bowl, beat margarine and granulated sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Gradually add powdered sugar; blend well. By hand, stir remaining cake ingredients until well blended.
Spoon batter into prepared pan; spread evenly.
Bake at 350 degrees for 58 to 62 minutes.
Cool uprigfht in pan on wire rack 1 hour;
invert onto serving plate.
In small bowl, combine glaze ingredients until well blended. Spoon over top of cake, allowing some to run down sides.
Store tightly covered. 16 Servings. Since this cake has a soft tunnel of fudge, ordinary doneness tests cannot be used. Accurate oven temperature and bake times are essential. HIGH ALTITUDE: Increase flour to 2 1/4 cups plus 3 T

"BLACK FOREST CHERRY BUNDT CAKE"
1- Pkg. Devils Food Cake Mix
1- 21oz. can cherry pie filling
1/4- cup oil
Combine the cake mix, oil & eggs and beat well.
Add pie filling and mix just until blended. Pour into a greased bundt pan.
Bake in a preheated 350º oven for approx. 45 min. or until done.
Cool in pan 25 min. then invert onto rack to finish cooling.
Slice and serve with a dollop of cherry pie filling and Cool Whip.
Note: I have made the using different flavors of pie filling and cake mix.
Yellow cake mix with apple pie filling with a sprinkle of cinnamon is really good also.

"EASY FRUIT CRISP DUMP CAKE"
1 Package Betty Crocker Super Moist Yellow Cake Mix
1/2 stick Margarine (melted)
1 can (21 oz) Cherry pie filling
1 can (8 oz) Crushed Pineapple (undrained)
Heat oven to 350 degrees.
Stir together cake mix and margarine in large bowl until crumbly; set aside.
Spread pie filling and pineapple in ungreased rectangular pan (13X9X2).
Sprinkle cake Mix evenly over fruit.
Bake 35-40 minutes or until light brown. Serve warm or cool.

1 Box yellow cake mix
1/2 cup Wesson oil
3 oz mandarin oranges
3 1/2 whipped topping
20 oz pineapple. crushed
1 pkg instant pudding, vanilla
Mix first 4 ingerdients for 3 full minutes.
Put in 2 cakes pans. Bake 375, 30 to 35 minutes, cool.
Mix all ingredients for topping together until pudding is dissolved, refrigerate.
Spread topping on 1" thick between layers and frost entire outside of cake.
Refrigerate until ready to eat.
I use the topping for other cake, keeps well

1 CUP BROWN SUGAR
1 CUP WATER
1 1/2 CUPS RAISINS
1/3 CUP LARD OR SHORTENING
1 TEAS CINNIMON

1/4 TEAS NUTMEG
BOIL THESE 7 INGREDIENTS TOGETHER FOR 3 MINUTES. LET COOL.
2 CUPS FLOUR
1/2 TEAS BAKING POWDER
1 TEAS SODA
ADD SODA DISSOLVED IN A LITTLE WARM WATER.
ADD FLOUR WHICH HAS BEEN SIFTED WITH BAKING POWDER.
BAKE IN LOAF PAN AT 350 OVEN FOR 30 MIN.
I USUALLY DOUBLE THE RECIPE AS THIS ONLY FILLS A 1 POUND LOAF PAN, SO DOESN'T GO VERY FAR.
I COOK 45 MINUTES OR UNTIL IT IS DONE ON THE BOTTOM.

"CROCKPOT CHOCOLATE CAKE"
one cup Bisquick
one cup sugar
one third of a cup + 3 tablespoons unsweetened cocoa
1/2 cup milk
1 tea vanilla
1 2/3 cups hot tap water
Mix Bisquick, 1/2 cup sugar 3 tbs cocoa, milk and vanilla.
Spoon batter evenly into greased crockpot.
Mix remaining sugar, cocoa and hot water.
Pour over batter in crockpot.
Cook on high...2 to 2 1/2 hours, or until batter no longer looks shiny on top. Don't over cook!
The batter rises to the top like cake...underneath is a rich chocolate pudding.
Serve with ice-cream or whipped cream.

1 pkg of yellow cake mix
4 cups minature marshmallows
1 can of pie filling of choice
Pre-heat the oven to 350 degrees.
Spray cake pan 13x9x2 with non-sticking cooking spray.
Pour the marshmallows in the cake pan. Set aside
Make cake batter according to pkg directions
Pour cake batter over marshmallows
Now spoon the pie filling over the batter
Bake for 45 minutes. The mystery is that the marshmallows will rise to the top and make a meringue like top. The pie filling will go to the bottom.
I used strawberry pie filling. It is so moist and ever sooooooo good and yummmmmmy. I guess you could use any flavor of cake mix.
